Sicilian Watermelon Pudding For The Hydration Win!

Staying fully hydrated during these hot Summer Months is sometimes easier said than done. Not only does our skin and hair need the hydration, but EVERY cell in the human body needs it. That said, drinking tons of water can get booor-ing.

Enter our friend, watermelon. Watermelon is one of the most hydrating fruits, as it contains about 92% water. We found this swoon-worthy Sicilian Watermelon Pudding recipe from @foodnouveau and made a few skin-friendly tweaks.

INGREDIENTS

  • 4 cups coarsely chopped, seeded watermelon (rind discarded)
  • 1-2 tbsp cornstarch or arrowroot powder (watch consistency and add as necessary.
  • 1 stickpack of Collagen Boost
  • ¼ cup granulated monkfruit or stevia sweetener
  • ½ vanilla bean, seeds scraped, or 2 tsp vanilla bean paste (vanilla extract just isn't the same!
  • 2 tsp strained freshly squeezed lemon juice

INSTRUCTIONS

  • Puree the watermelon in a mixer until smooth Pour through a fine mesh strainer into a measuring cup, discarding remaining solids. You should have just about 3 cups of watermelon juice.
  • Ladle 2 tbsp watermelon juice into a small bowl and stir in the cornstarch or arrowroot powder until smooth.
  • Add Collagen Boost, stir until smooth.
  • Pour the remaining watermelon juice into a medium saucepan. Bring to a boil, then simmer for 5 minutes. Add the granulated sweetener and vanilla seeds, and whisk until the sweetener is dissolved. Stir the cornstarch mixture again, then whisk into the watermelon juice. Simmer, whisking occasionally, for 3 minutes, then whisk in the lemon juice.
  • Pour the pudding through a clean strainer and into a measuring cup then transfer to small glass jars or ramekins (the fancier, the better! Cover and chill until set, at least 3 hours.

Serve chilled, topped with sugar-free whipped topping and crushed Pistachios.
