The last thing any of us want to do in this Summer heat is turn on the oven! We love this delicious peanut butter, chocolate covered "cookie", but what we love most is it's no-bake! We used peanut butter, but they can be made with any nut butter. The dark chocolate delivers antioxidants and minerals and may lower your risk of heart disease and help lessen inflammation. Did you know sea salt can actually help keep you hydrated? It's also great for skin health, nourishes your adrenal glands and actually reduces fluid retention! Make a batch of these yummies and keep on hand in the freezer for an easy, healthy sweet treat.
INGREDIENTS
- 1 cup / 250g peanut butter smooth and soft
- ½ cup / 60g coconut flour
- ¼ cup / 50g granulated monkfruit sweetener
- 1 teaspoon vanilla extract optional
Coating
- ½ cup / 80g sugar free chocolate chips or 90% dark chocolate
- 1 tablespoon coconut oil
- sea salt, for sprinkling on top
INSTRUCTIONS

Mix together peanut butter, coconut flour, sweetener and vanilla in a bowl. You can use a fork for this.

Form dough balls and put them on a baking sheet lined with parchment paper. Flatten them with your fingertips. Freeze until set - this takes 1 hour.

Melt 90% dark chocolate or sugar free chocolate chips plus coconut oil in a water bath or in the microwave. Using 2 forks, dip the cookies into the chocolate. Sprinkle with sea salt and place back in the freezer for 10 minutes for the chocolate to set.
